Revered by chefs and grain lovers, this South Carolina–based milling company is as passionate about their organic grains and flours as one can be. Under its founder Glenn Roberts, Anson Mills has revived near extinct heirloom grains from before the Civil War, from corn to rice and wheat. All products are stone-milled as in the days of yore with lots of dedicated labor involved such as hand-sifting and hand scrubbing, which is also reflected in the price. The mill offers superbly textured and aromatic grits, cornmeal, and different kinds of whole grain polenta. My current favorite: their tiny whole grain farro piccolo, which is very small ancient wheat of Italian origin. It cooks fast and brings a rustic sweetness and unique plumpness to your table. Their slow-roasted farro, a firm textured and flavorful whole grain, is equally worth exploring. Yes, some of their grains and grits need time to cook. But once you’ve tried them, you might never look back—or at your clock for that matter. In addition to grains, the mill also sells a number of distinct character-rich flours, such as a Colonial-style whole wheat and a coarse graham flour as well as buckwheat and rye flour.
