cabernet sauvignon

1 tablespoon red wine vinegar

1 tablespoon olive oil

1 tablespoon chopped fresh rosemary

1 garlic clove, minced

¼ teaspoon coarse salt

⅛ teaspoon ground black pepper


Mix everything together and use as directed in a recipe.


VARIATION


Port Wine Marinade: (Best with lamb, duck, game meats.) Substitute port for the red wine, and increase the quantity of salt to 1 tablespoon.

Buttermilk Marinade

Best with veal, lamb, chicken, turkey, shellfish, fish

MAKES ABOUT 1 CUP


¾ cup buttermilk

2 tablespoons peanut oil or canola oil

2 garlic cloves, minced

2 teaspoons coarse salt

1 teaspoon sugar

1 teaspoon chopped fresh oregano

½ teaspoon ground black pepper

¼ teaspoon cayenne pepper


Mix everything together and use as directed in a recipe.

Adobo Marinade

Best with beef, veal, pork, lamb, poultry

MAKES ABOUT 1½ CUPS


Juice of 1 lemon

Juice of 1 lime

¼ cup orange juice

¼ cup tomato sauce

¼ cup red wine

3 tablespoons olive oil

2 tablespoons mild hot pepper sauce, such as Frank’s

2 garlic cloves, minced

2 teaspoons smoked paprika

1 teaspoon coarse salt


Mix everything together and use as directed in a recipe.

Tandoori Yogurt Marinade

Best with veal, chicken, turkey, lamb, vegetables

MAKES ABOUT 1 CUP


¾ cup (6 ounces) plain yogurt

2 tablespoons fresh lemon juice

1 tablespoon minced fresh ginger

2 large garlic cloves, minced

1 tablespoon Garam Masala Rub

½ teaspoon ground turmeric

1 tablespoon paprika

1 tablespoon chopped fresh cilantro

1 tablespoon minced fresh onion

½ tsp red food coloring (optional)


Mix everything together and use as directed in a recipe.

Salsa-Beer Marinade

Best with beef, pork, chicken, turkey

MAKES ABOUT 3 CUPS


1½ cups beer (any style)


1 cup salsa (any heat level)

¼ cup apple cider vinegar

2 tablespoons molasses

2 tablespoons Worcestershire sauce

2 teaspoons coarse salt


Mix everything together and use as directed in a recipe.

Korean Barbecue Marinade

Best with beef, pork, lamb, chicken

MAKES ABOUT 1½ CUPS


1 small onion, coarsely chopped

1 medium ripe Asian pear or pear, cored, peeled, and coarsely chopped

6 garlic cloves, coarsely chopped

1 tablespoon chopped fresh ginger

½ cup soy sauce

¼ cup light brown sugar

2 tablespoons honey

2 tablespoons toasted sesame oil

3 scallions (green and white parts), trimmed and thinly sliced

2 tablespoons sake or dry sherry

¼ teaspoon crushed red pepper (optional)


Puree everything in a food processor until relatively smooth. Use as directed in a recipe.

Smoky Coconut Marinade

Best with veal, pork, chicken, turkey, shellfish, fish

MAKES ABOUT 1½ CUPS


1 cup coconut milk

¼ cup coconut rum, such as Malibu

Finely grated zest and juice of 1 lime

1 teaspoon liquid smoke

1 tablespoon chopped fresh cilantro

2 garlic cloves, minced

1 tablespoon minced fresh ginger


Mix everything together and use as directed in a recipe.


VARIATION


Coconut-Thyme Marinade: (Best with veal, pork, chicken, turkey, shellfish, fish.) Omit the liquid smoke and replace the cilantro with fresh thyme.

Lemon Herb Marinade

Best with veal, chicken, turkey, shellfish, fish

MAKES ABOUT 1½ CUPS


Grated zest of 1 lemon

Juice of 2 lemons

½ cup dry white wine

¾ cup olive oil

2 tablespoons Dill-Tarragon Rub


Mix everything together and use as directed in a recipe.

Lemon Soy Marinade

Best with fish, shellfish, chicken, beef, pork

MAKES ABOUT 1 CUP


½ cup soy sauce

Grated zest and juice of 1 lemon

2 tablespoons peanut or canola oil

1 tablespoon honey

3 garlic cloves, minced

1 tablespoon minced fresh ginger

2 teaspoons toasted sesame oil

3 scallions (green and white parts), trimmed and chopped


Mix everything together and use as directed in a recipe.


VARIATION


Sweet Mirin Marinade: (Best with fish, shellfish, chicken, beef, pork.) Reduce the soy sauce to ¼ cup. Replace the lemon zest and lemon juice with ¼ cup mirin. Increase the honey to 2 tablespoons.

Sicilian Citrus Marinade

Best with veal, lamb, chicken, turkey, shellfish, fish

MAKES ABOUT 1 CUP
