Tofu (Silken): Japanese-style tofu, it has a softer consistency than regular tofu and falls apart easily. It is often sold in an aseptic package and is best used in salad dressings, sauces, and desserts where a creamy texture is desired.

Tokyo Turnips: About the size of a red radish but with a white skin and interior. It has a mild flavor and is usually eaten raw.

Truffles (Tuber): A hard, rough, irregular round mushroom found near tree roots and grown underground. A highly-prized and expensive food, that is the size of a walnut up to an apple, with a delicate earthy smell and served raw in paper-thin slices as a topping. Black (France) and White (Italy and U.S.) truffles are found by trained dogs and female pigs, between September and May.

Truffles (Chocolate): A confection made with a ganache center (mixture of chocolate and dairy, or dairy substitutes, in 2 to1 ratio) coated with chocolate or cocoa powder, usually in bite-sized balls. Other fillings and coatings can be used.

Truffle Oil: It is created by soaking truffles in olive oil. The aroma of truffle oil is earthy and only a few drops are needed for flavoring.

Umeboshi Plum Paste: A zesty purée made from the flesh of salt pickled umeboshi plums. Adds tartness and saltiness to salads, spreads, sauces, and vegetables.

Vidalia Onions: An unusually sweet onion grown in a production area defined by law in Georgia. They are available from April to mid-June.

Wheat Berries: Whole unprocessed wheat kernels, the whole grain containing the endosperm, bran, and germ, thus all fiber and nutrients are still intact.
