1. Microwave the butternut squash according to the package directions. Carefully transfer it from the plastic package to a cutting board. Let cool for a couple of minutes, then chop the squash into bite-size pieces.

2. Add the butternut squash soup, water, salt, and pepper to a medium pot and bring to a boil over high heat. Add the ravioli, making sure that all the ravioli pieces are submerged in the liquid. Reduce the heat to medium and cook until the ravioli are tender, 8 to 10 minutes.

3. Remove the soup from the heat and carefully cut each ravioli into quarters. Garnish with the parsley, if desired.

CURRIED LENTIL SOUP


YIELD: 2 servings

PREP TIME: 5 minutes

COOKING TIME: 15 minutes

1/2 tablespoon canola oil

1/2 (14.5-ounce) container

Trader Joe’s Mirepoix

2 cups vegetable broth, or 2

cups hot water plus 2 (9.6-gram)

pouches Trader Joe’s Vegetable

Concentrate

1 (8-ounce) package Trader Joe’s

Black Beluga Lentils

1/4 cup Trader Joe’s Thai Red

Curry Sauce

1 tablespoon curry powder

juice of 1/2 lemon

kosher salt and freshly ground

black pepper

Lentils can take a little time to cook, but not so with the already prepared beluga lentils from Trader Joe’s.

1. In a medium pot, heat the oil over medium heat until shimmering. Add the mirepoix and sauté until the vegetables are slightly softened, about 5 minutes.

2. Add the vegetable broth, lentils, curry sauce, curry powder, and lemon juice, stirring to combine. Let the soup simmer over medium heat for about 10 minutes.

3. Season to taste with salt and pepper.


Note: Mirepoix is a mixture of chopped carrots, celery, and onions that’s a base for many soup, stew, and sauce recipes. Trader Joe’s makes it easy by doing all the chopping for you.

SEAFOOD STEW with GARLIC BREAD CROUTONS


YIELD: 2 servings

PREP TIME: 10 minutes

COOKING TIME: 25 minutes

1/2 (16-ounce) package Trader

Joe’s Seafood Sausage

(2 sausages)

1 tablespoon canola oil, divided

1 (9-ounce) box frozen Trader

Joe’s Garlic Bread

1 teaspoon Trader Joe’s

Crushed Garlic

1 (14.5-ounce) can Trader Joe’s

Organic Tomato Bisque

3/4 cup water

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground

black pepper

1 (1-pound) package Trader Joe’s

Steamer Clams in Garlic

Butter Sauce

This luxurious stew is a cinch to put together. The clams already have a butter sauce that adds a delightful seafood taste.

1. Preheat the oven to 425°F.

2. Cut a slit into each seafood sausage. Peel away the casings from the sausages and crumble the seafood into pieces. Over medium-high heat in a medium pot, heat 1/2 tablespoon oil until shimmering. Add the seafood sausage pieces and sauté just briefly until cooked, 2 to 3 minutes, stirring constantly. Remove from the heat and transfer the sausage pieces to a plate.

3. Place the garlic bread on a baking sheet and bake until golden and toasted, 10 to 12 minutes.

4. Meanwhile, heat the remaining 1/2 tablespoon oil in the medium pot over medium-high heat. Add the garlic and cook, stirring constantly, until golden, about 30 seconds. Stir in the tomato bisque soup, water, salt, and pepper. Bring the soup to a boil, then reduce the heat to low and simmer.

5. Meanwhile, prepare the clams according to the package directions, then let them sit for 2 minutes.

6. Cut the garlic bread into bite-size pieces for croutons.

7. Add the reserved seafood sausage pieces and clams with butter sauce to the soup. Stir, and cook just 1 minute. Remove from the heat and top with the croutons.

MEXICAN TORTILLA SOUP with AVOCADO and TORTILLA CHIPS

PREP TIME: 15 minutes

COOKING TIME: 20 minutes

2 cups chicken broth, or 2 cups

hot water plus 2 (9.6-gram)

pouches Trader Joe’s Savory

Chicken Concentrate

1/2 (28-ounce) can Trader Joe’s

Diced Organic Tomatoes in

Tomato Juice

2 tablespoons Trader Joe’s Taco

Seasoning Mix, or more

1/2 teaspoon kosher salt, or

more

1/4 teaspoon freshly ground

black pepper, or more

2 cups chicken
