While you should generally dunk at room temperature, soaking durations will depend on the nut. For the most part, the more dense the nut, the longer the underwater time.

KITCHENWARE BASICS THAT ROCK MY WORLD
Even someone who lives on Top Ramen can appreciate the value of a can opener, veggie peeler, rubber spatula, and kitchen knife.
But rather than bore you with the most basic of utensils, I want to fill you in on a few of the cooking tools that are the bread to my Earth Balance. For those on a tight budget, you don’t have to run to the cookware section and pull a supermarket sweep. In fact, one of the most exciting elements of cooking is giving yourself something to look forward to. Just gradually add items to your stockpile.
Pots and Pans
Though many of these are standards in kitchens across America, a few exude very special qualities. Some are planet-conscious and others promote healthier cooking. So, move over chemical-laden nonstick cookware. Mama’s got some new pots and pans, and she’s not afraid to use them.
THE SKINNY: WHY DO YOU HAVE TO SEASON A NEW PAN? SEASONING MAINTAINS THE NATURAL NONSTICK QUALITIES. IF YOU SKIP THIS STEP, THE SKILLET WILL RUST AND THE FOOD WILL ADOPT THE METALLIC TASTE. SEASONING GIVES YOUR COOKWARE A LONG AND HAPPY SHELF LIFE.
HOW TO SEASON A NEW PAN
PREHEAT OVEN TO 350°F. WASH THE PAN WELL WITH WARM WATER AND MILD DISHWASHING SOAP. DRY COMPLETELY WITH A TOWEL. SPREAD ABOUT ONE TABLESPOON OF A NEUTRAL OIL (GRAPESEED OIL WORKS WONDERS) IN THE PAN USING A KITCHEN BRUSH OR PAPER TOWEL. WARM THE PAN GENTLY OVER LOW HEAT ON THE STOVETOP. ONCE THE SURFACE IS COMPLETELY COVERED WITH NO EXCESS OIL, PUT THE PAN IN THE OVEN FOR APPROXIMATELY ONE HOUR. AFTER ONE HOUR, TURN OFF THE OVEN AND LEAVE THE PAN INSIDE UNTIL COOL.
CAST-IRON COOKWARE
This is a staple in any cook’s kitchen—and for good reason. Cast iron promotes even heat distribution, and seeps off small amounts of iron into your food to ensure you are getting an appropriate amount in your diet. The real benefit is that cast iron pans last f-o-r-e-v-e-r. They can handle a beating or two, and are passed from generation to generation without ever losing their touch. ENAMELED CAST IRON
Enameled cast iron is a prettier alternative to bare cast iron. Its enamel glaze prevents rusting, so it doesn’t have to be seasoned, and it is much easier to clean. The downside? You may have to shell out a few extra bucks. But the good things in life are far from free. While enameled cast iron cannot withstand the searing heats bare cast iron can, it absorbs heat and distributes it evenly. It’s also energy-efficient, safe to use in the oven, and won’t absorb the odors and flavors of food to pass on to your next meal.
