Noodles with Match Vegan Pork and Hot Bean Sauce
After a little discussion with Allison at Match premium meats, we decided this recipe was a must to include in the cookbook. Not only because it is a spicy and super -flavorful stir -fry that will open your sinuses in a matter of seconds, but also because we’re suckers for the piggies. They probably see the worst of the goddamn factory farms. The more we indulge in this dish, the less pork we’ll consume. It makes a world of difference, bitches. Because the serving size here is bigger, this is best prepared for a family get-together or cozy dinner party.
MAKES 6 TO 8 SERVINGS
1 pound (455 g) dried soba noodles
5 tablespoons (75 ml) Chinese hot bean sauce
or Korean gochujang paste
2 teaspoons evaporated cane sugar
3 tablespoons grapeseed oil
¼ cup (25 g) finely chopped
fresh ginger
1 pound (455 g) Match vegan pork
½ cup (30 g) sliced green onions
1 teaspoon sesame oil
KIM’S NOTE: BECAUSE OF THE HIGH TEMPERATURE, MAKE SURE THAT ALL OF YOUR INGREDIENTS ARE READY BEFORE YOU BEGIN, AS THE STEPS WILL GO RATHER QUICKLY. USE THIS RECIPE AS A BASE BUT BE BRAVE AND ADD ANY OTHER INGREDIENTS THAT YOUR LITTLE HEART DESIRES. TRY PEANUTS, TOASTED SESAME SEEDS, OR VEGETABLES!
Boil the noodles according to package instructions. Drain well. Lightly oil and set aside. Meanwhile, combine the hot bean sauce and sugar in a small bowl.
Heat a wok or a 12-inch (30.5 cm) nonstick skillet over high heat until a drop of water evaporates immediately. Add the oil while swirling the wok to coat. Add the ginger and stir-fry for 30 seconds. Add the Match vegan pork and stir-fry about 3 minutes, breaking up into bite-size pieces as it browns (cook longer if you like a crispier texture). Add the hot bean sauce mixture and cook, stirring constantly, for 3 minutes. Stir in the noodles, green onions, and sesame oil. Cook about 2 more minutes, or until the noodles are hot. Remove from the heat and serve.
