Allow the biscuits to cool for several minutes. Cut each biscuit in half horizontally so you have a bottom and top biscuit and place on plates. Add a desired amount of strawberries on the bottom half of the biscuit. Top the strawberries with a scoop of vegan whipped cream. Put the top half of the biscuit on the whipped cream, and top with another scoop of vegan whipped cream.

White Chocolate Chip Cookies
This is my new favorite cookie. They are a little crispy on the outside, but oh-so-soft on the inside. It will be harder to find the vegan white chocolate chips in a store, but you can order them online at veganstore.com. Trust me, you may find yourself waiting at the mailbox and flirting with the mailman.
MAKES 30 COOKIES
1¼ cups (150 g) unbleached all-purpose flour
½ cup (50 g) dark chocolate cocoa powder,
unsweetened
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons arrowroot (or cornstarch)
½ cup (120 ml) almond milk
½ cup (120 ml) canola oil
½ cup (100 g) packed light brown sugar
½ cup (100 g) evaporated cane sugar
2 teaspoons vanilla extract
⅔ cup (80 g) chopped walnuts
⅔ cup (115 g) vegan white chocolate chips
Preheat the oven to 350° F (180° C).
In a medium bowl, sift together the flour and cocoa powder. Add the baking powder, baking soda, salt, and arrowroot.
In a separate large bowl, combine the milk, oil, both sugars, and vanilla extract. Whisk together until well blended. Stir in the flour mixture until well combined. Add in the walnuts and chips. Let the dough sit for about 15 minutes to firm up a little.
Drop about 1 tablespoon of the dough at at time on an ungreased cookie sheet, leaving about 2 inches between each cookie (they will spread when baking). Bake 8 to 10 minutes. Let the cookies cool on the cookie sheet 5 minutes. Transfer to a wire rack to cool completely.
