4 to 5 fresh strawberries

Preheat the oven to 350° F (180° C).

Place the walnuts, pecans, oil, oats, 2 tablespoons of the sugar, 2 tablespoons of the maple syrup, ½ teaspoon of the cinnamon, ½ teaspoon of the vanilla, the almond extract, and a pinch of salt in a food processor and pulse until well combined. The mixture should smell like cookie dough and should stick together after pulsed approximately 20 times.

Lightly coat a mini cupcake pan with oil and place 1 tablespoon of the crust inside each section. Press the crust into the pan using the bottom of a shot glass and damp hands. Bake 7 minutes. Let cool on rack.

Meanwhile, clean the food processor and add the cream cheese, 2 tablespoons of the maple syrup, the remaining sugar, 2 tablespoons of the lemon juice, the flour, ¼ teaspoon of the cinnamon, a pinch of salt, and the remaining ½ teaspoon vanilla extract. Pulse until the mixture looks uniform and creamy. Top the cooled crusts with 1 tablespoon filling per section. Bake 20 to 25 minutes, or until the cheesecakes look browned. Let cool, then chill at least 30 minutes or up to 2 hours for the best consistency. Slide a small knife or toothpick around each cheesecake to remove from the pan.

To make the strawberry sauce, place the strawberries, the remaining maple syrup, the remaining lemon juice, and a pinch of salt in a blender. Purée until the mixture is uniform. Strain through a fine strainer.

Drizzle the strawberry sauce over the cheesecakes when serving.
