Quick breakfasts. Make extra pancakes and waffles and tuck some away in the freezer to give you a few extra minutes on summer mornings to package tray-frozen foods. The kids can fix their own breakfast by warming the waffles and pancakes in the toaster and topping them with fresh fruit, preserves, and a little yogurt.

Ground beef. Cook several pounds of ground beef; divide it into several containers to be tossed quickly into sauces and quick casserole dishes that require cooked ground beef.

Quick desserts. If your family loves desserts, spring is the best time to freeze a few extra fruit breads, whole grain and fruit bars, cookies, and sheet cakes for busier times. Bake sheet cakes and divide in 4. Do not frost. These can be used later as single-layer cakes or double-layer birthday cakes (two sections), or served with fresh fruit and toppings.

Tray-freeze meats. Meatballs, meat patties, fried chicken, and similar foods can be tray-frozen and packed in plastic bags. At mealtimes, take out the number of servings needed.
