Orange Cake Glaze


This glaze adds a sweet, homemade taste to any vegan cake. And it’s easily adaptable if you’re craving a lemon, lime, or even grapefruit glaze.

½ cup confectioners’ sugar

2 TB. pulp-free orange juice, strained

Yield: ¼ cup

Prep time: 2 minutes

Serving size: About 1 teaspoon or to taste

1. In a medium bowl, stir together confectioners’ sugar and orange juice with a spoon until creamy and no confectioners’ sugar bits remain.

2. Drizzle over cake immediately before serving.(It will soak in and not look as pretty or taste as good if it’s done too early prior to serving.)

Glossary

best possible option (BPO)A helpful concept to think about for making the best possible vegan food choice in less-than-ideal situations.

bioavailablity The amount of a substance, such as a vitamin, the human body can actually use, which can vary depending on many factors, including what other vitamins, minerals, and nutrients are eaten with it.

blackstrap molasses Sticky, slow-running molasses derived from sugar cane. Unlike other sugars, it’s actually healthy in many regards, adding a sweet source of calcium, magnesium, potassium, and is especially a great source of iron.

body mass index (BMI)A measure of appropriate body size based on weight and height.

calorie A measure of the energy value of a food.

cholesterol Is a fat found in all animal fats and oils. It can be found in every cell of the human body and is used to build healthy cells, as well as some vital hormones.

clementine Small citrus fruits that kids often prefer over oranges, tangerines, or grapefruit because of their small slices, lack of seeds, and extra-sweet flavor. Just one small clementine provides more than 80 percent of the adult RDA of vitamin C.

curry A catchall term for a combination of traditional Indian spices. It can be mild or spicy to fit children’s palates.

docosahexaenoic acid (DHA)An omega-3 essential fatty acid, important for infant, child, and adult health. Vegans get DHA from algae-sourced supplements and fortified foods.

Dutch oven A type of large cooking pot with thick walls and usually at least 6 quarts in size; perfect for big pots of beans, stews, soups, casseroles, and sauces.

family medicine doctors Doctors who complete 3-year residency training programs after medical school, specializing in health care for the whole family. Look for a family medicine physician who is board-certified by the American Board of Family Medicine.

family mission statement A shared vision of a family’s values, plans, and goals as they relate to the current and future functioning of the family—in this case as they relate to veganism.

fold To gently blend one ingredient into others, not stir or mix, with larger, slower, and gentler stirringlike movements, using a large wooden spoon or rubber scraper. This helps keep baked goods lighter.

heterocyclic amines (HCAs)Cancer-causing compounds found in cooked meat.

meat analogs Plant-based foods that closely resemble animal-based counterparts, such as veggie bacon, burgers, sausages, and hot dogs.

nitrites Preservatives found in cured meats, like hot dogs and pepperoni, that are believed to cause cancers and tumors.

pediatricians Doctors who complete 3-year residency programs after medical school in caring for children’s health needs.
