INTRODUCTION

For years in the food business, I was a very complicated pastry chef—I was duped into believing you needed thousands of gadgets and every cookbook under the sun to make anything taste good. That was crazy talk.

I chose to write this book to save you time and money. Every recipe was chosen to show you how many uses you can get by changing just the littlest detail in a basic recipe. You can even make these cupcakes vegan without breaking a sweat! Even if you don’t use these specific cupcake and frosting recipes, the point I’m trying to express is to keep it simple. All you need is a few basic recipes you know are fail safe, and anything is possible.

Inspiration for my flavor combinations comes from everywhere: dinner at an amazing restaurant, walking around Chicago, taking a ride to get milk for my kids, and sometimes even from a dream or a joke. You can draw inspiration from anything, it’s just up to you to make something from it. Now, not everything will turn out to be spectacular—I’ve certainly had a few massive failures (think gin and juice with an herb topping)—but I always learn and move onward and upward!

I still keep all my cookbooks around, but really, they’re just to make me look smart. In my pocket I keep a little notebook with just under a dozen recipes that have become the roots of everything I do in the kitchen. Most of the cupcakes in this book are the result of playing around with my core recipes. But in the first chapter, Anarchy in the Cupcake Pan, you’ll find those basic cupcakes, frostings, and toppings that, with a little tweaking, you can make into something awesome.
