ASIAN MEATBALLS in PEANUT SAUCE
YIELD: 3 servings

1/2 pound ground pork
1/2 (8-ounce) can water
chestnuts, finely chopped
1 tablespoon minced ginger
1 large egg
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground
black pepper
1/4 cup Trader Joe’s Japanese-
Style Panko Bread Crumbs
1/2 (16-ounce) package Trader
Joe’s Italian Capellini
1 (9-ounce) jar Trader Joe’s Satay
Peanut Sauce
2 tablespoons chopped scallions
These Asian-flavored pork meatballs are paired with thin capellini noodles and a Thai peanut sauce, resulting in an Asian riff on spaghetti and meatballs.
1. Preheat the oven to 425°F. Spray a rimmed baking sheet with cooking spray.
2. In a large bowl, combine the ground pork, water chestnuts, ginger, egg, salt, pepper, and bread crumbs with your hands.
3. Roll about 1 tablespoon of the meat mixture into meatballs one at a time and place on the prepared baking sheet. Bake until cooked through, 12 to 15 minutes. Cut into a meatball to determine that it’s no longer pink.
4. Meanwhile, cook the capellini according to the package directions. Drain the pasta in a colander and return to the pot. Add the peanut sauce and scallions to the pasta and cook over medium heat, stirring constantly, just 1 to 2 minutes. Portion pasta and sauce onto plates, top with meatballs, and serve.
SOYAKI STEAK
YIELD: 2 servings

Boneless Beef Rib Eye Steak
(about 1 pound)
1 cup Trader Joe’s Island Soyaki
kosher salt and freshly ground
black pepper
Trader Joe’s Island Soyaki includes pineapple juice, which contains bromelain, a natural enzyme known to tenderize meat.
1. In a shallow dish, cover the steak with the soyaki. Marinate for at least 1 hour in the refrigerator.
2. Remove the steak from the marinade and discard the marinade. Dab the steak with a paper towel to remove the marinade.
3. Preheat the oven’s broiler. Line a rimmed baking sheet with foil.
4. Place the steak on the prepared baking sheet and season it with salt and pepper. Cook the steak under the broiler 2 to 3 minutes per side, until it reaches your desired doneness (see page 153). You may need to make a cut into the center of the steak to determine its doneness.
5. Remove the steak from the oven, transfer to a cutting board, and cover with a piece of foil. Let the steak rest for 5 minutes before slicing and serving.
BEEF STROGANOFF WANNABE

1 (10-ounce) package sliced
white mushrooms
1/2 tablespoon canola oil
1/2 (16-ounce) package Trader
Joe’s Italian Fusilli
1/2 (16-ounce) package Trader
Joe’s Traditional Pot Roast, cut
into bite-size pieces
1 (11-ounce) box Trader Joe’s
Condensed Cream of Portabella
Mushroom Soup
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground
black pepper
1 cup sour cream
2 tablespoons chopped chives
(optional)
Trader Joe’s Condensed Cream of Portabella Soup infuses beefy noodles with that earthy mushroom taste.
1. Cut the larger mushrooms in half so all the slices are similar in size.
2. In a medium skillet, heat the oil over medium-high heat until shimmering. Add the mushrooms and cook until softened, about 10 minutes, stirring occasionally.
3. Cook the fusilli according to the package directions and drain.
4. Increase the heat to high and add the pot roast pieces to the mushrooms, mixing the mushrooms and beef together and cooking just 1 minute. Add the portabella soup, salt, and pepper. Cook until the sauce is bubbling, 2 to 3 minutes, stirring occasionally.
5. Remove from the heat and stir in the sour cream. Toss with the pasta. Garnish with chives, if using.
