This is a good basic hamburger recipe—you’re free to use any toppings you like.
1. Place the ground beef in a medium bowl and grind the everyday seasoning onto the meat and combine. Mold the meat into 4 patties.
2. In a medium skillet, heat the oil over medium-high heat until shimmering. Add the hamburger patties to the pan and cook until both burger sides are browned and have reached the desired doneness in the center (see page 153), about 3 minutes on each side, making sure to press the burgers down with a spatula when flipping them.
3. Meanwhile, arrange the bacon slices between layers of paper towels in a small microwave-safe dish. Microwave on high until crispy, 30 to 45 seconds. Warm the buns in the microwave.
4. Top each burger with a slice of cheese. Transfer the cheeseburgers to the buns and top with the bacon and other desired condiments.

1/2 cup ketchup
2 tablespoons yellow mustard
2 tablespoons honey

Hamburger Buns
When I was a kid, sloppy joes were my go-to birthday meal request.
1. In a medium skillet, heat the oil over medium-high heat until shimmering. Add the ground beef, salt, and pepper, stirring every couple of minutes to break up the meat. Sauté the meat until fully cooked, 6 to 7 minutes.
2. Take the pan off the heat. Push the cooked meat to one side of the pan and remove and discard most of the fat.
3. Stir the ketchup, mustard, and honey into the beef and heat the mixture over medium-high heat until the beef is hot and combined with the sauce. Remove from the heat and cover, to keep hot. Microwave the buns until warm. Pile the meat mixture onto the buns.
Note: The term “80/20” refers to the percentage of fat contained in the meat: 80/20 beef has 20 percent fat and is considered 80 percent lean.

Freshly fried to a golden crisp, tostadas are crunchy, slightly greasy (in a good way), and downright delicious.
1. Line a plate with a paper towel. Microwave the carne asada and refried beans on high for 2 to 3 minutes, stirring occasionally. Remove from the microwave and top with the cheese.
2. In a large skillet, heat 1 inch of oil over high heat until shimmering. Add 1 tortilla and fry until golden on each side, about 2 minutes per side. Transfer to the prepared plate to drain. Repeat with the remaining tortillas.
3. Layer the tostadas with the hot meat and bean mixture and top with guacamole and pico de gallo and other desired toppings.
