1/2 (12-ounce) bottle Trader

Joe’s Enchilada Sauce

1 cup shredded cheese, like

Trader Joe’s Fancy Shredded

Lite Mexican Blend

Pairing tamales with cheese and enchilada sauce creates a delicious treat.

1. Remove the plastic from the tamales and microwave on high until warm, 2 to 3 minutes. Carefully remove the tamales from the corn husks.

2. In a long microwave-safe dish, arrange the tamales in a row. Cut each one in half for quicker heating. Pour the enchilada sauce over the tamales and top with the cheese.

3. Microwave the casserole on high until hot, 3 to 4 more minutes.

BLACK PEPPER SHRIMP with FRIED RICE


YIELD: 2 servings

PREP TIME: 1 minute

COOKING TIME: 10 minutes

1/2 (16-ounce) bag Trader Joe-

San’s Vegetable Fried Rice

1/2 (16-ounce) bag Trader Joe’s

Jumbo Cooked Shrimp (to use

raw shrimp, see page 154)

1 tablespoon Trader Joe’s Black

Pepper Sauce

Be warned—Trader Joe’s Black Pepper Sauce packs quite a spicy punch. Use with caution.

1. In a microwave-safe dish, microwave the fried rice on high until hot, 2 to 3 minutes.

2. In another microwave-safe dish, stir together the shrimp and black pepper sauce. Microwave on high until just warm, about 30 seconds. Top the fried rice with the black pepper shrimp.

VEGGIE RISOTTO with SHRIMP


YIELD: 2 servings

1/3 (16-ounce) bag frozen Trader

Joe’s Bean so Green

1 (16-ounce) package frozen

Trader Joe’s Asparagus Risotto

1/3 (16-ounce) bag Trader Joe’s

Jumbo Cooked Shrimp (to use

raw shrimp, see page 154)

2 tablespoons Trader Joe’s

Grated Parmigiano-Reggiano

cheese (optional)

Making risotto, normally a very time-consuming process, has already been tackled thanks to Trader Joe’s.

1. Cut the green beans from the vegetable mix into bite-size pieces. Transfer the risotto to a microwave-safe dish and add the vegetable mix on top of it. Microwave on high until hot, 3 to 4 minutes.

2. In another microwave-safe dish, microwave the shrimp until just warm, about 30 seconds.

3. Add the shrimp to the risotto and top with the cheese, if using.

CHICKEN PARMESAN STRIPS

A simple take on a comfort food classic.

1. Pierce a few holes in the plastic film over the chicken tenders. Microwave on high until mostly warm, about 2 minutes, then transfer the chicken to a plate. Cover with the marinara sauce and top with the mozzarella and Parmigiano-Reggiano.

2. Microwave on high until hot, 2 to 3 minutes.

Trader Joe’s Harvest Hodgepodge is a combo of a ton of veggies like baby corn, broccoli, carrots, sugar snap peas, and water chestnuts.

1. In a microwave-safe dish, microwave the chicken on low power until slightly warm, 2 to 3 minutes, then cut the chicken into bite-size pieces.

2. In another microwave-safe dish, add the Pad Thai and Harvest Hodgepodge. Microwave on high for 2 minutes. Add the chicken pieces to the dish and microwave on high until the entire meal is hot, about 1 more minute.
