we decided to start small with a meat-based version of a ginger bread house. After a bit of planning, we gathered numerous meaty supplies, construction assistants, project mangers, and schematics and embarked upon the project. After numerous hours of planning, construction, and cooking, we were content with our greasy meat masterpiece.

However, our complacency didn’t last long—soon we decided to follow up the meat house with something more complex. Various ideas were considered but we finally decided upon a meat ship, complete with bacon sails, pirates, canons and a kraken, all in a sea of blue pork. Needless to say, we’ll never view meat the same way again.

Fried Guac Bites

4 Hass avocados

2 tomatoes, chopped

½ large red onion, chopped

½ bunch fresh cilantro, chopped

3 limes’ worth of fresh lime juice

4 garlic cloves, chopped

1 tsp cumin

1 tbsp paprika

½ cup salsa (Del Monte, Pace, your homemade or favorite)

1 package of guacamole seasoning

½ tsp sea salt

½ tsp freshly ground pepper

4 eggs

3 tbsp water

1 cup flour

1 cup breadcrumbs

oil for frying


Peel and pit avocados and mash. Fold in tomatoes, onion, cilantro, lime juice, chopped garlic, cumin, paprika, salsa, guacamole seasoning, salt, and pepper. Line an 8-inch square baking pan with plastic wrap. Spoon avocado mixture into pan; spread into an even layer. Place a sheet of plastic wrap directly on the surface and freeze until solid. At least an hour before serving, beat eggs with the water in a separate bowl. Cut the avocado into small cubes. Dip each cube in flour, then the egg wash, breadcrumbs, and again in wash and breadcrumbs. Arrange in a large baking pan; cover and return to the freezer until firm (about 25 minutes). Heat oil in a pot to 350°F. Fry frozen guacamole bites in batches until golden; drain on paper towels.

Bacon Mac and Cheese Meatloaf

2 lbs ground chuck, 80% lean

2 eggs

2 slices wheat bread, crumbled

2 tbsp ketchup

1 large garlic clove, minced

2 tbsp parsley, minced

Worcestershire sauce to taste

Cayenne pepper to taste

Salt to taste

Black pepper to taste

1¼ cups onion, sliced

10 strips of bacon

Premade macaroni and cheese


Mix ground chuck, eggs, bread, ketchup, garlic, parsley, Worcestershire sauce, cayenne pepper, salt, and black pepper with hands in a large bowl. Meanwhile, sweat onion until translucent but not brown. Allow onions to cool, then add to meat mixture. Cover bowl with plastic wrap and move to refrigerator. Preheat oven to 375°F. Lay bacon across the width of a loaf pan. Press a layer of meat into the bottom of the pan, on top of the bacon. This layer should fill exactly one third of the loaf pan. Scoop some of the macaroni and cheese into the loaf pan, making sure to press out any air bubbles. This layer should also fill one third of the loaf pan. Form a slab of meat in the approximate size and shape of the remaining one third of the loaf pan. Transfer the slab to the loaf pan. Add or remove meat as necessary to ensure a snug fit. Fold strips of bacon back over the top of the meatloaf. Roast until internal temperature reaches 160°F.

White Castle Casserole

Remove the tops from White Castle Burgers and arrange them compactly in an oven-proof dish. Layer cheese and strips of bacon on top of sliders. Whisk together 1 cup milk and 4 eggs seasoned with salt and pepper. Pour egg mixture over the sliders, making sure as much liquid as possible is absorbed. Replace tops and let the sliders soak for about 30 minutes and then top with more cheese. Bake at 350°F for about 45 minutes.
