FRIED FISH SANDWICHES

YIELD: 2 sandwiches

PREP TIME: 10 minutes

COOKING TIME: 25 minutes

1 fillet frozen Trader Joe’s Panko

Breaded Tilapia Fillets

2 tablespoons mayonnaise

2 teaspoons Trader Joe’s Organic

Sweet Pickle Relish

1 teaspoon lemon juice

2 Trader Joe’s Honey Wheat

Hamburger Buns

Trader Joe’s Panko Breaded Tilapia Fillet is fried fish at its best without all of the labor-intensive work.

1. Preheat the oven to 425°F. Line a rimmed baking sheet with foil.

2. Place the fish fillet on the prepared baking sheet and bake until hot, 20 to 25 minutes. Meanwhile, in a small bowl, make a tartar sauce by stirring together the mayonnaise, relish, and lemon juice.

3. Carefully remove the fish from the oven and split the fillet in half horizontally with a knife. Layer the bottom halves of the buns with the tartar sauce and fish. Add the bun tops.

BUFFALO CHICKEN WRAPS with BLUE CHEESE and CARROTS

YIELD: 2 wraps

PREP TIME: 10 minutes

COOKING TIME: 5 to 7 minutes

12 to 14 frozen Trader Joe’s

Buffalo Chicken Wings Fully

Cooked

2 Trader Joe’s Habanero Lime

Flour Tortillas, or other tortillas

2 teaspoons Trader Joe’s Blue

1/2 (10-ounce) bag shredded

carrots

This sandwich isn’t for those wary of spice. Between the fiery buffalo chicken wings and the zesty habanero tortillas, this wrap packs a lot of heat.

1. Microwave the wings according to the package directions. When the wings are cool enough to handle, remove the meat from the bones. Discard the bones.

2. Lay the tortillas on a cutting board. Spread 1 teaspoon blue cheese dip in a line down the middle of each tortilla.

3. Layer the chicken and carrots on top of the blue cheese dip on the tortillas. Roll the wraps burrito-style, tucking the bottom up before rolling sideways.

EGG SALAD SANDWICHES

YIELD: 2 sandwiches

PREP TIME: 5 minutes

COOKING TIME: 5 minutes

1 (9.3-ounce) package Trader

divided

1/4 teaspoon salt

1/4 teaspoon freshly ground

black pepper

1 celery rib, chopped

4 slices Trader Joe’s Soft 10

Celery adds a slight crunch to contrast with the silkiness of the egg salad. For extra oomph, add ham or even prosciutto.

1. In a small bowl, mash the hard-cooked eggs with a fork. Add 2 tablespoons mayonnaise and the salt, pepper, and celery, and stir to combine. Taste and adjust the seasonings as needed.

2. Spread the bread slices with the remaining 1 tablespoon mayonnaise. Mound the egg salad onto 2 slices of bread, then top with the remaining slices.

Note: If TJ’s hard-cooked eggs are not available, see page 153.
